Simple and Savory

I think it’s been a couple of weeks since I’ve posted an RV friendly recipe. This, like my others, is quick, simple, and tasty. It’s a slam dunk for those who like frittatas, but don’t care for the prep work of the traditional sort.

So, here we go!

Easy Mini Frittatas

INGREDIENTS

6 eggs

¾ cup milk

1 bag of Uncle Ben’s (or equivalent) 90 second seasoned rice. (I used brown and wild rice this morning, but have used chicken flavored in the past.)

4-6 oz frozen chopped spinach (I keep mine frozen and use kitchen scissors to cut it.)

1 tsp garlic powder

½ tsp seasoning salt

¼ tsp black pepper

½ cup shredded cheese (I typically use Mexican three cheese blend.)

Option: approx. 1 cup of cooked and seasoned ground beef, turkey, or sausage

DIRECTIONS
Preheat oven to 325°F

Lightly oil or spray a regular or jumbo muffin pan.

In a medium bowl combine all the ingredients and whisk to combine.

Pour the egg mixture into the muffin tins filling almost to the top.

Bake 20 minutes for regular sized muffin pan, or 35 minutes for jumbo sized (I used jumbo this morning.)

These are very easy to freeze in Ziplock bags. To reheat, just open the bag and pop in the microwave. Times will vary depending upon watts, but usually 45 seconds to 1 min will do the trick.
