St. Patty’s Day Dessert and Teamor Irish Roots

About 45 minutes ago, I wrapped up my writing for the day. I cozied in to watch television, and all of a sudden had a strange craving for a dessert my grandma used to make. It’s very quick and easy, so it only took a few minutes to prepare.

As I’m sitting here in nostalgic heaven, remembering my grandma letting me lick the spoon when she finished mixing the sweet, yummy dessert, it struck me that this green goodness is perfect for St. Patrick’s Day! Of course, I wouldn’t miss the opportunity to share it here:

Watergate Salad

You’ll need:
1 box of Jell-o Pistachio Pudding
1 container of Cool Whip
1 cup of crushed pineapple
1 cup of chopped walnuts
1 cup of shredded coconut
1 cup of miniature marshmallows

In a mixing bowl, combine the dry pudding and the pineapple (with the juice,) and stir until blended. Mix in remaining ingredients, put in in a pretty glass bowl (that’s what my gram used to do,) and enjoy!
